Head chef, Briony Bradford's approach to food includes \u2018nose to tail\u2019, wasting nothing and selecting only seasonal and local produce from growers and suppliers she knows personally. She describes her style as \u2018traditional French technique with a modern twist\u2019, enjoying \u2018pushing the boundaries of flavours\u2019 and \u2018making everything in my dishes from scratch\u2019. Briony's penchant for French cuisine has been garnished from her time spent with mentors that include Michelin star chefs Claude Bosi at Hibiscus and Andre Garret at Galvin at Windows in London; and Paul Cooper at Bishop Sessa, Ross Lusted at The Bridge Room, Grant King at Gastro Park & Brent Savage at The Bentley Restaurant and Bar in Sydney.
